Cool Climate Malolactic Fermentation: What does it mean in the year 2022?

On January 24, at 11 am (AST), Dr. Maret du Toit, professor in oenology specializing in wine microbiology at Stellenbosch University, will be presenting. Her research focuses on the use of novel lactic acid bacteria for malolactic fermentation (MLF), interaction with wine yeasts and the influence on wine aroma. Moreover, she has been involved in the commercialization of several MLF starter cultures for the wine industry.


In this opportunity, Dr. Maret du Toit will be presenting the fundamentals of MLF: the Saccharomyces yeast chosen, non-Saccharomyces yeasts; the lactic acid bacterial species and strains, and the timing of MLF inoculation. She will focus on how to fully leverage the positive impact of the MLF process in cool climate winemaking. At the end of the session, there will be a designated time for you to make your questions to our speaker regarding the topic.

No Pressure! Opening winemaking possibilities in Eastern Canada with the Flash-detente technology

On January 27, at 12 pm (AST), David Stasiuk from Nuance Winery Supplies will be presenting. As a graduate of Winemaking and Viticulture at Niagara College, David Stasiuk exudes a passion for cool-climate winemaking. He has gained extensive knowledge while working in different regions, both within Canada and around the globe.


In this opportunity, David Stasiuk will be presenting the fundamental principles and practical aspects of the thermo-flash-détente unit. Moreover, he will be sharing highlights of the three years of experience in ON, QC and NB with flash-détente equipment in different wineries and discuss its potential benefits for Nova Scotia. At the end of the session, there will be a designated time for you to make your questions to our speaker regarding the topic.
